Deteksi Cemaran Salmonella Spp. pada Udang Putih yang Dijual di Pasar Tradisional
Abstract
Food security is a key requirement that is increasingly important. Food safe, high quality, nutritious, are and available enough is the main prerequisite that must be met. It is in order to create a system of quality assurance of food that provides protection for the interests of health and plays a role in improving the prosperity and welfare of the people. Indonesia is one of the producers and the main exporters of fishery products, especially of vannamei shrimp (Litopenaeus vannamei) and is one of the species of shrimp varieties that are currently developed by shrimp farmers in Indonesia. This study was to determine the contamination of Salmonella spp. on the vannamei shrimp which is sold in the market of Kotagede and Mining, Banguntapan Yogyakarta. This study is quantitative with a descriptive approach (descriptive research). Tools and materials in this study were petri dishes, test tubes, micropippets, needle ose, Media Lactose broth, Media Selenite Broth, Media Salmonella, Shigella Agar, Media Triple sugar Iron Agar. Sulfite Indole Motility agar. The analysis of this study by using a laboratory test from a sample of shrimp. Results obtained from 10 samples taken (8 of Kotagede traditional market, and 2 of the market Mining) are all positive Salmonella spp. Potential pollution of white shrimp in the market can be due to the sanitation market, the seller, or comes from the shrimp place the shrimp were grown. The density of the market also cause the mixing of white shrimp fresh with the merchandise of other. flies and dust is one of the surnber bacterial infection.
